We’ll all probably be indulging a little over the holidays, so why not make some sweet treats as a nighttime snack that helps you unwind, relax and sleep.\n\nThese cookies are my go-to for helping with my insomnia. Because edible cannabis gets processed through the liver, the marijuana’s effects last longer, so they help keep me asleep at night. Or they could be a fun addition to your holiday cookie exchange. Just be sure the other participants are on board with a medicated cookie before serving. \n\nThe two major ingredients that help make these cookies taste like cookies first and medicine second are the nutmeg and the nuts. Though take care not to add too much nutmeg as it can overpower. Meanwhile, nuts also do an excellent job of masking excess cannabis flavor. I like to use pecans, because not only are they tasty, but they’re also:\n\n* Full of fiber\n* Have anti-inflammatory benefits \n* Are packed with antioxidants\n\nFor anyone with a nut allergy, simply leave out the nuts and add extra chocolate chips. This not only tastes great, but also significantly extends the life of the butter. \n\nIf you want to go with brown butter or ghee, allow it to cool first before you start using it. If mixed in when hot, the dough will spread more, giving you thinner, wider cookies. You’ll also want to add an extra egg and an extra 2 oz of butter if you go this route.\n\nThis style of cookie can be used with any varietal of cannabis, so you can use them for different purposes. Preheat oven to 350 degrees F.\n2. Add butter, brown and white sugar, salt, baking soda, baking powder, vanilla extract and nutmeg to a stand mixer bowl.\n3. Start the stand mixer on low speed until the ingredients look moist and then up to medium speed for approximately 5 minutes, until the mixture is light and fluffy.\n4. Add the egg and continue to mix until smooth. \n5. Reduce speed to lowest setting, then add flour, chocolate chips and nuts.\n6. Mix until a stiff dough is formed.\n7. Use an ice cream scoop (or similar) to get a consistent cookie size and drop them onto a cookie sheet. I can fit 8–10 cookies on a normal half sheet pan.\n8. Bake for about 15 minutes, until the cookies are pale gold on the edges. For crunchier cookies, add 3–5 minutes and wait for the whole cookie to be pale gold in color.\n9. Allow the cookies to cool on the sheet pan until set. (If you’re going for crispier cookies, the cooling time will be shorter.)\n10. We’ve adapted the original recipe here, bringing the dosage way down for us plebs, but keeping all the other good stuff intact, like chocolate chips, peanut butter chips and banana chips. We’d like to think this treat would inspire a few shake, rattle and rolls from the King of Rock ‘n’ Roll himself.\n\nRELATED: [CANNABIS COOKBOOK TAKES EDIBLES TO THE NEXT LEVEL](https://www.hellomd.com/health-wellness/5bd759aeee0ba400094ef0de/cannabis-cookbook-takes-edibles-to-the-next-level)\n\n### Ingredients for the Elvis Cookie\n\n* 6 tbsp | 85 g unsalted butter \n* 1/2 cup | 90 g high-quality semisweet chocolate chips (60–65% cacao) \n* 2 3/4 tsp | 12 g Canna Butter (see below), at room temperature \n* 1/2 cup | 100 g packed light brown sugar \n* 1/2 cup | 70 g all-purpose flour \n* 1/4 cup plus 2 tbsp | 30 g unsweetened cocoa powder \n* 1/4 tsp baking soda \n* 1/4 tsp kosher salt \n* 1 large egg, at room temperature \n* 1 tsp vanilla extract \n* 1/2 cup | 42 g banana chips, roughly chopped \n* 1/2 cup | 85 g peanut butter chips \n* 1/4 cup | 45 g white chocolate chips \n\n**Special Equipment:**\nDouble boiler \n\n### Directions for the Elvis Cookie\n\n* Preheat the oven to 325°F [165°C]. Line 2 baking sheets with parchment paper or silicone baking mats.\n* In a medium heatproof bowl over a double boiler, melt together the butter and semisweet chocolate, stirring every so often with a rubber spatula, about 5 minutes. \n* Add the **canna butter** (see recipe below) and whisk to combine. Whisk in the brown sugar, remove from the heat, and let cool for about 5 minutes. \n* Meanwhile, in a medium bowl, whisk the flour, cocoa powder, baking soda, and salt. Set aside. \n* Whisk the egg and vanilla into the chocolate mixture.\n* Add half the flour mixture to the chocolate mixture and fold to combine. Fold in the remaining flour mixture. \n* Add the banana chips, peanut butter chips, and white chocolate chips, and fold again until just combined. Do not overmix.\n* Refrigerate the dough for about 15 minutes to rest and firm up. \n* Weigh the dough and divide into sixteen equal balls. Using a scale to portion the dough is highly recommended for this recipe, however, if you do not have a scale, portion the dough using a 2-Tbsp [30 ml] cookie scoop, or 2 level Tbsp [30 ml] per cookie. If you go this route, level the scoop when measuring and scrape out all the dough completely from the scoop each time.\n* Place eight dough balls onto each of the prepared sheets, spacing them evenly so they have room to spread. Press them down slightly to flatten. Bake for 12 to 15 minutes until the cookies are dry on the surface, but still a little soft on the inside. Let the cookies cool on the baking sheet. They will firm up once completely cooled, but we can’t resist indulging in these while they are still warm and gooey!\n\n**Make-Ahead Tip:** The cookie dough can be made, portioned, flattened, and frozen, then stored in an airtight container in the freezer for up to three months. Bake as directed directly from the freezer. \n\n**Variation:** To make a double-dose Elvis Cookie sandwich, sandwich peanut butter and fresh banana slices between two cookies! Crumble in some candied bacon to pay true homage to the King. (Elvis was known to throw some bacon into his fried peanut butter and banana sandwiches when he was feeling especially kinglike.)\n\n***\n### Canna Butter Recipe\n\n- **Active Time:** 30 minutes\n- **Inactive Time:** 28 hrs\n- **Makes:** 1 cup | 206 g\n\nA basic building block for cooking with cannabis, canna butter is one of the most commonly used forms of infusion. Once you master this recipe, you can turn almost anything into an edible.\n\n#### Ingredients\n\n* 1/4 oz | 7 g decarboxylated cannabis flower \n* 12 oz | 340 g cold unsalted butter (see Note) \n* 2 cups | 473 g cold water \n\n#### Special Equipment\n\n* Candy thermometer (optional) \n* Fine-mesh strainer \n* Cheesecloth \n* Tall 1-qt [960-ml] deli container or measuring cup \n* 1/2-pt [240-ml] glass Mason jar with tight-fitting lid \n\n**Note:** For our recipe, we use standard American butter, which typically clocks in at around 80 percent butterfat. European-style butter will have upwards of 82 percent butterfat, which may give you a higher potency than what we’ve tested.\n\n#### Directions\n\n* In a medium saucepan over medium heat, combine the cannabis, butter, and water. Bring to just below boiling, 200°F to 210°F [95°C to 99°C], without stirring. We recommend using a candy thermometer for precision. Adjust the heat to low. Keep the mixture at this temperature for 4 hours. Using a rubber spatula, scrape down the sides of the pan if you start to see bits of herb sticking to it. The liquid will be at a constant gentle simmer. A few bubbles will break through the fat layer, but the mixture should never come to a rolling boil. If you notice the water getting low from evaporation, add 1 cup [237 g] hot tap water to prevent the mixture from burning. \n* After 4 hours, remove the pan from heat and let cool for 10 minutes.\n* Place a fine-mesh strainer over a large bowl and line the strainer with cheesecloth. Carefully pour in the cannabis-butter mixture. Use a rubber spatula to scrape out the pot, making sure you get all the butter and herb particles. With the spatula or the back of a ladle, press the mixture against the strainer to squeeze out all the liquid you can. Gather up the cheesecloth and give it another good press against the sieve to make sure you get out as much liquid as possible. Discard the leftover debris. (If you are making a larger batch, you may find it helpful to use a potato ricer to efficiently compress the cheesecloth-wrapped herb.) \n* Pour the butter-water liquid into a tall container—make sure the container isn’t too wide or your butter block will be too thin and difficult to remove. Use a rubber spatula to clean the bowl; make sure you get every last bit—that’s liquid gold in there! Cover and refrigerate for 24 hours. \n* Once the mixture cools, the butter and water will separate. Remove the butter block from the container and pat dry with a paper towel. You may have to cut around the edges or lightly push down on the sides to loosen it. If your block breaks while pulling it out, don’t worry. Just make sure to get all the butter pieces out. Use a small strainer to scoop up any remaining butter bits. \n* On the bottom of the butter block you will see a green film. Using the back of a knife, scrape off this film and toss it along with the remaining water down the drain. \n* In a small pot over low heat, melt the canna butter. Once melted, immediately turn off the heat and pour the butter into the glass jar and seal the lid. Label the jar with the date and contents. What was the start of it all?\n\n**Stephanie Hua:** It all started at the San Francisco Cooking School. That's where I met Coreen about five years ago. Coreen was my schoolmate. In any case, the founder of the school, Jodi Liano, introduced us to [publicist and agent] Andrea Burnett. Andrea had previously worked at Chronicle Books for a long time, and after we had first met, she came back to us and said, “Hey, you know, I'm really interested in doing a cannabis edible book.”\n\nI had already come up with this concept of really focusing in on low-dose cannabis edibles with my business Mellows. I’ve been a believer in low-dose products for a long time now. And so I was really excited about taking that philosophy, and growing and expanding it to cover a lot of other recipes that wouldn't necessarily work as a packaged product. The recipes that we love and have had in our back pockets for a long time.\n\n### What year did your cannabis marshmallows company Mellows get its start, and when did the idea for the book come to be and then take off?\n\n**SH:** So, Mellows first got started in 2015. We’ve been making low-dose, gourmet, hand-crafted marshmallows for the past few years.\n\nWe started working on the book close to about a year ago. That’s when it was first conceptualized. I brought Coreen in because there’s no one I would want to share this project with more than her.\n\nAnd we had so many recipes. It was hard to narrow them down. Deciding on the right ones was much harder than I thought it would be. So that process was pretty fast, and then we shot the photographs last October and developed the recipes, tweaked and tested them in four months.\n\nIt was a really fast timeline, especially with legalization this year and the recreational market opening up. We wanted to get the book on shelves in time for the holiday season. So, we crunched through it to make sure we could get it out in time. \n\n### There’s no doubt your cookbook would make a great gift for a lot of home cooks. The recipes photos are drool-worthy. What are you hoping folks will get out of your cookbook?\n\n**SH:** Part of our goal is to inspire people to think beyond their current perception of what a cannabis edible can be. We really wanted to be creative with the recipes and showcase how elegant and elevated it can be. \n\nWe feature some of our favorite makers in California. I think that it really helps folks new to the plant break into cannabinoids, terpenes and flavonoids. What was your thought process there?\n\n**SH:** Yeah, thank you. It was really important for us—part of our overall goal for this book is education. For a lot of people, the photos are what catches their eye, and a lot of times they tend to gloss over the introduction.\n\nBut I think with cannabis cooking, it’s so important to really understand the ingredients, and it's something that a lot of people aren't aware of. They don't realize that there are hundreds of cannabinoids, for example.\n\nAnd so we thought it was really important to include a pretty robust cannabis 101 upfront just as a primer—before you even get into the kitchen, know what you're working with. \n\n### I like that. And so you mentioned that you had so many recipes that it was hard to bring it down to the 30. How did you make that selection for the cookbook? \n\n**SH:** Well, the thing we ended up on was “Small Bites for the Modern Cannabis Kitchen”—so, small bites, low dose. What would be easy to do as a one-bite dosage. And so that really helped us narrow down. We aren't doing huge potluck style. Everything is very party-ready, mostly sweet. So, desserts, hors d'oeuvres, finger foods, things that people can really entertain with.\n\nAnd so, that was also a guiding theme: What can people entertain with? For us, we love to entertain obviously as cooks, and we love to feed people. And I think that a large part of edibles is being able to showcase it in a way where you're sharing it, and you're bringing people around our table and sharing this experience together. \n\nAnd we also looked at seasonality. The book is very much a reflection of how we cook and eat. And so being fortunate to live in San Francisco, we have such amazing access to local, seasonal produce. And so we celebrate summer tomatoes, strawberries, green garlic in the spring. We try to work in those special ingredients. \n\n### What do you recommend to folks who don’t have that local, seasonal access? For example, folks in the Northeast who have shorter summers—and therefore shorter growing seasons—and cold, snowy winters. \n\n**SH:** Yeah. We also make a lot of substitution options in the book. For example, when peaches aren't in season, and you want to make this delicious peach cocktail, you can easily use frozen peaches. It won’t quite be the same, but it'll still be delicious.\n\nAlso, chocolate is always in season. We have a lot of chocolate recipes.\n### With your cannabis edibles cookbook, are you hoping to encourage people to be adventurous, to try different foods and flavor combinations? \n\n**SH:** Absolutely. There are a lot of unexpected twists. For example, we have a blood orange blondie in the book. We call it our shatter. This idea of normalizing cannabis is a huge goal of this book, and to think, “Hey, I can have this on my coffee table and not feel weird about, and it’s a beautiful coffee table book. It should feel right at home on my cookbook shelf with all of my other cookbooks.”\n\nAnd so normalization is definitely a big goal of mine with this book, and putting it out there and really presenting it as something that isn't scary, and that’s accessible and delightful. \n\n### Do you have plans to create more cannabis edibles cookbooks? \n\n**SH:** Yes. These mishaps usually arise because of confusion about how different cannabis can affect us when eaten instead of inhaled. This potent medicinal chemical is created by your body when it breaks down THC, which is technically known as delta-9-THC (but we’ll just refer to it as THC for simplicity).\n\nWhile there hasn’t been a lot of research into the medicinal effects of 11-hydroxy-THC, the research that has been done shows that [it has powerful psychoactive effects, and similar physiological effects to THC](https://www.ncbi.nlm.nih.gov/pubmed/4558903). This powerful and plentiful cannabinoid travels through your digestive system and eventually makes it to your liver where it’s broken down into other molecules called metabolites. While metabolites are usually more powerful than the compound being broken down, in some cases, they’re actually much more potent and powerful. This is the case with 11-hydroxy-THC.\n\nWhen you smoke THC, your body does create some 11-hydroxy-THC, but it’s around 10 times less than what’s created when you eat THC.\n\nSome believe this means 11-hydroxy-THC is as much as 10 times stronger than THC, but it isn’t quite as simple as that. While it’s much more potent, scientists say this estimate is too high based on their research. \n\nFor example, in one study two groups of patients were [intravenously given the same amount of either THC or 11-hydroxy-THC](https://www.ncbi.nlm.nih.gov/pubmed/4729039). Patients then reported on how high they felt afterwards. Subjects given THC reported on average a three out of 10 when asked how high they felt. Those who had 11-hydroxy-THC in their system reported an average of eight out of 10. \n\nThis suggests that 11-hydroxy-THC is more potent and powerful than THC is, but only two to three times more, not 10 times. The effects of both are present in edibles, but 11-hydroxy-THC is much more plentiful, so it should account for the majority of the edible’s effects. \n\n### The Benefits of 11-Hydroxy-THC\n\nWhile there hasn’t been nearly enough research on the specific medical effects of 11-hydroxy-THC, medical marijuana patients have been consuming edibles for their medical needs for thousands of years. There are benefits to taking edibles that keep patients coming back to them and to 11-hydroxy-THC. So, what makes this method different from the rest?\n\n* **Cannabis edibles last longer:** For one thing, edibles have longer-lasting effects. While they take longer to start working—typically 60–120 minutes as opposed to 10–15 minutes with smoking—they can last much longer. A cannabis edible high usually lasts six to eight hours, while the high from smoking only lasts around two or three hours. For patients with medical conditions like chronic pain, anxiety or depression, it can be especially helpful to have a long- lasting medicine that doesn’t require medicating over and over again throughout the day. \n\n* **Marijuana-infused foods are more sedative and psychoactive:** Folks have noted that the effects of edibles are slightly more sedative than when they smoke cannabis. This can make edibles a great choice for conditions like insomnia. A dose taken a few hours before bedtime can lead to a strong sense of sleepiness when it’s time for bed. Since it’s also long-lasting, the sedation can continue all the way through the night, fading just in time for morning. \n\n### How to Take 11-Hydroxy-THC\n\nIf you want to use 11-hydroxy-THC for your medical needs, there are two important things you should know to make sure you have a positive experience:\n\n>**1.** Not all edibles produce 11-hydroxy-THC to the same extent. This is because not all edibles contain high levels of THC. As it turns out, THC actually starts out as tetrahydrocannabinolic acid (THCA), which is the acidic form of THC. THCA has medical benefits but isn’t psychoactive, and it doesn’t metabolize into 11-hydroxy-THC. To create the THC needed to turn into 11-hydroxy-THC, [THCA needs to go through a process called decarboxylation](https://www.hellomd.com/health-wellness/56de6bd6c60fd50008000081/decarboxylating-marijuana-why-its-important) where it converts into delta-9-THC. This happens when it’s heated in a specific temperature range. \n\n>If you’re making your own edibles directly from cannabis, you’ll need to start with decarboxylation if you want to get the effects from 11-hydroxy-THC. If you’re [buying your cannabis edible](https://www.hellomd.com/products?category=Edibles) elsewhere, you want to look for an edible that’s made from THC rather than THCA or cannabidiol (CBD). Most edibles are THC-based and have already been decarboxylated, but it’s important to double check. \n\n>**2.** The other key factor for using 11-hydroxy-THC effectively is controlling your dose. It can be easy to eat too much of the edible for your needs. And because it takes one to two hours to start working, many times people think the edible isn’t working and too quickly they eat more after they’ve had their first dose. This is the worst thing you can do—and is a one-way ticket to a bad edible trip. \n\n>Instead, start with a very low dose, nothing above 2.5–5 mg. Then wait two hours before taking any more. You may not feel anything or you may feel very high, it depends on the person.  But this dose is low enough that you shouldn’t have a bad trip. Once you know how the edible affects you, if you feel the dose was too low, try more next time, but only a little bit more. Increase your dose slowly in 2.5–5 mg increments each time.
